Other forms: cheddars
Cheddar is a firm yellow cheese, originally from Somerset. Mature cheddar, a block of cheddar, grated cheddar.
It is the most eaten cheese in Britain and much of the world, and the name is not protected, so cheddar is made everywhere — only West Country Farmhouse Cheddar carries a protected designation. Strength runs from mild through mature to extra mature and vintage. Cheddaring is a real step in making it, stacking the curd to press out whey. Note that Cheddar Gorge, where it was first matured in caves, is a real place.
