cured

UK/kjʊəd/US/kjʊɹd/
adjectiveB22 meaningsCommon in everyday speech and writing · #3,315 of 15,258leans spoken

Cured means preserved with salt, smoke or time. Cured meat, cured ham, dry-cured bacon.

Curing draws water out with salt so that bacteria cannot grow, and smoking and air-drying finish the job. Dry-cured bacon is salted rather than injected with brine, which is why it does not leak white liquid into the pan. Cured also describes concrete and resin that have hardened chemically. Note cure, which as a verb covers medicine, food and materials; and that a cured ham keeps for about a year without refrigeration.
