fermented

US/fɹ̩ˈmɛntʰəd/
adjectiveB2+Occasional — familiar, but not everyday · #10,285 of 15,258leans written

Fermented means changed and soured by tiny living cultures. Fermented milk, fermented cabbage, fermented for weeks.

It is one of the oldest preservation methods there is: the acid and alcohol the microbes make keep other organisms out, which is why fermented foods keep without refrigeration. Nearly every culture has its own — kimchi, sauerkraut, yoghurt, miso. Note ferment, from the Latin for boiling.
