Parsley is a bright green herb chopped over almost anything. Chopped parsley, a bunch of parsley, parsley sauce.
Flat-leaf parsley has more flavour and curly parsley more texture, which is why the flat kind is used in cooking and the curly kind was once used mainly as a garnish. It is one of the few herbs that can be used in real quantity — tabbouleh is mostly parsley. Note that parsley is slow to germinate, taking weeks, which has produced a great deal of folklore.
