Other forms: sorbets

Sorbet is a frozen fruit ice made without any dairy. A lemon sorbet, a sorbet between courses, raspberry sorbet.

It is fruit, sugar and water, and the sugar is what stops it freezing into a solid block — too little and it is a brick. It is served between courses in a formal meal to clear the palate. Sherbet is the same word arriving by another road.
