venison

UK/ˈvɛ.nɪ.zən/US/ˈvɛ.nɪ.sən/
nounB2+Occasional — familiar, but not everyday · #10,016 of 15,258leans spoken

Venison is the meat of a deer. Roast venison, a venison stew, hang the venison.

It is very lean, which means it dries out if cooked like beef and is usually served pink or stewed slowly. In Britain much of it comes from culling, since deer have no predators left and the herds would otherwise strip the woodland.
