Brie is a soft French cheese with a white rind. A wheel of brie, ripe brie, brie and crackers.
The rind is an edible mould deliberately grown, and it ripens the cheese from the outside in — which is why a wheel is soft at the edge and firm in the middle until it is ready. It is named after the region east of Paris where it is made.
