Other forms: fillets
A fillet is a boneless strip of meat or fish. A fillet of cod, fillet steak, fillet the fish.
Fillet steak comes from the tenderloin, the least worked muscle in the animal, which is why it is tender and expensive and has almost no flavour of its own. It works as a verb: to fillet a fish is to take the flesh off the bone in one piece.
