griddle

UK/ˈɡɹɪdəl/US/ˈɡɹɪdəl/
nounB2+Occasional — familiar, but not everyday · #11,575 of 15,258neutral

Other forms: griddles

A griddle is a flat hot metal plate for cooking pancakes. Heat the griddle, a cast-iron griddle, cook on the griddle.

It is flat, which is the whole difference from a grill pan with its ridges, and the flatness is what suits batter. Cast iron holds heat well enough not to drop when cold batter goes on, and it is the traditional material for that reason.

It is the same word as grill, from the same Latin — but a griddle is flat and solid, for pancakes that would fall through the bars of a grill.
