risotto

UK/ɹɪˈzɒtəʊ/US/ɹɪˈzoʊtoʊ/
nounB1+Occasional — familiar, but not everyday · #8,959 of 15,258mostly spoken

Other forms: risottos

Risotto is a creamy Italian rice dish stirred slowly. Make risotto, mushroom risotto, stir the risotto.

The cream comes from starch rubbed off the grains by stirring, not from any cream — which is why the rice must be a short round variety and why the stock goes in a ladle at a time. It is served loose enough to spread slowly on the plate.
