truffle

UK/ˈtɹʌf.l̩/US/ˈtɹʌf.l̩/
nounB2+Occasional — familiar, but not everyday · #10,969 of 15,258leans spoken

Other forms: truffles

A truffle is a rare underground fungus prized in cooking. Shave the truffle, a white truffle, truffle oil.

It grows on tree roots and cannot be farmed reliably, which is why dogs and pigs are trained to smell it out and why the price is what it is. Most truffle oil contains no truffle at all, only a synthetic compound. A chocolate truffle is named for the shape.
